Tempranillo grapes are sourced from old vineyards near Manzanares. Exhaustive grape selection. fermentation is done at a controlled temperature in stainless steel tanks. Once completed, malolactic fermentation is conducted to improve the mouth-feel and complexity. After the second fermentation is completed, the wine is aged in French and American oak barrels for 4 to 6 months at our fully sustainable underground cellar.
