Javier Dominguez has been widely acknowledged as the driving force behind the emergence of quality wines in Spain’s historic Ribeira Sacra. He has worked tirelessly to revive the region’s indigenous vines, undertaking ‘heroic viticulture’. Vines are grown at varying altitudes of 300 to 700 metres, across a steep, north-facing hillside with schist and granite soils, flecked with slate, quartz and iron. The vines are up to 100 years old. Freshness and acidity are an obsession at Dominio do Bibei. This is aided by the Atlantic climate, and a large diurnal range in the summer and autumn.
